How to Choose High-Quality Salmon

Before preparing salmon with mushroom sauce, it is crucial to select high-quality salmon. 

It is recommended to choose fresh salmon. 

Fresh salmon should feel firm and elastic when touched, and it should quickly regain its shape when pressed.

The fish should have a solid, smooth, and glossy appearance, without being loose, flabby, or showing signs of loss of elasticity or any noticeable odor.

Step-by-Step Guide to Preparing the Salmon and Mushroom Sauce


Main Ingredients 
  • Salmon steak1pc
  • Pepper and sea salt1teaspoon
  • Lemon peel1 lemon
  • Lemon juice5g
  • Dill1pc
Sauce Ingredients 
  • Onion50g
  • Butter10g
  • Diced white mushroom200g
  • Cream50g
  • White wine50g
  • Parmesan cheese30g


Step 1

  • Pat dry the salmon steak using a kitchen towel to remove any excess water.
  • Season both sides of the salmon with a sprinkle of pepper and sea salt.
  • Drizzle 5g of lemon juice over the salmon.
  • Sprinkle lemon peel on top.

Step 2

  • Place the ingredients into a vacuum bag, add 1 piece of dill, and vacuum-seal the bag

Step 3

  • Pour 1,800g of water into the main pot.
  • Place the measuring cup on top and preheat the main pot at 10 minutes/55℃/REV 1.

Step 4

  • Put the simmering basket with the salmon into the main pot.
  • Cover with the measuring cup and let the ingredients simmer for 40 minutes/55℃/REV 1.
  • Once the simmering is finished, remove the salmon from the pot and clean the main pot.

Step 5

  • Add 50g of diced onion to the main pan.
  • Place the measuring cup on top and chop the onion for 10 seconds/REV 8.

Step 6

  • Add 10g of butter.
  • Without the measuring cup, stir-fry the ingredients for 3 minutes/120℃/REV 1.

Step 7

  • Add 50g of cream.
  • Add 30g of Parmesan cheese.
  • Add 200g of diced mushrooms.
  • Add 30g of white wine.
  • Without the measuring cup, bring the ingredients to a boil for 5 minutes/110℃/B-REV 2.

Step 8

  • After boiling, pour the sauce over the salmon.
  • Serve the salmon with lemon slices and dill leaves. Enjoy your salmon with mushroom sauce.
